What schema does and does not do
It states your facts plainly instead of leaving them to be inferred. It is not a ranking lever. Treat it as plumbing that helps your address, hours and services be read correctly, and you will have the right expectation of it.
Keeping it true
Markup that says you close at five when you close at six is worse than no markup at all, because you have now stated something wrong in the clearest machine readable way available. Regenerate whenever your hours or address change.
One block per location
Each branch needs its own markup on its own page. A single block for a whole chain tells search engines very little, and it cannot state hours that differ between branches.

Schema is a plain description of your business for machines. Name, address, hours, what you sell. It goes wrong in two ordinary ways: invalid, so it is ignored, or valid and wrong, which is worse.
The usual form of wrong is drift. Hours were marked up two years ago and changed on the profile last spring, so the page now says one thing in text and another in code.
There is a hard line worth knowing before you cross it. Marking up reviews or ratings you did not receive is a spam violation, and the penalty applies to the whole site rather than the page.
